Hi Silver Fox, not sure if this is too late for you but I've just completed my PADI OWC in Cancun, I had the chance to do some Cenote diving but my family got ill so that put an end to that plan! I used Manta divers, Cancun. All the guys were really help full and they can be very flexible with your wants.

if you're uk based, then i'd recommend doing martyn farr's cavern course. yes, i know it's not mexico, but the skills martyn will teach you can be translated anywhere in the world. it's a full-on weekend where you will learn so much it's unreal.
i had toyed with the idea of learning in warmer waters, but elected to learn from, arguably, the best in the business. deffo made the right choice!

Had the same question as you and searching on the internet I came across Steve Gerrard. http://www.deephorizon.info/ Can't vouch for him as I've only booked for next April but he seems a good choice. If you use him - or anyone else - do let me know how you get on. Cheers, Haydn (hleaker@dsl.pipex.com0
